This dish is perfect if you have old rice or veggies and need to clean out the fridge. Feel free to cook up small cubes of chicken or pork.
This dish benefits greatly from at least day old rice.

Ingredients

  • 1 Cup day old Rice

  • 1/3 Cup Mushrooms cubed

  • 2/3 Cup Frozen Peas and Carrots

  • 1 Large Egg

  • 1 onion chopped

  • 1 Garlic clove chopped finely

  • 1/2 Cup of sprouts

  • 1/8-1/4 tsp Ginger

  • 1/8-1/4 tsp Crushed Red Pepper Flakes

  • 4 Tbsp soy sauce

  • 1/2 – 1 tsp sesame oil

Directions

  • Scramble the egg, cook and set aside
  • sweat the onion and garlic until translucent
  • Add red pepper flakes.
  • Add mushrooms and cook until tender (you can add other veggies you might have in this step
  • Add rice, scrambled egg, frozen peas and carrots, soy sauce and sesame oil. (If you are adding some other type of cooked protein add it now.
  • Cook everything together and make sure the sauces are all properly mixed in this will take about 5-10mins
  • Add sprouts and cook for another 5 mins

Notes

  • If you add chicken or pork it is best to cook it all before adding it.
  • Ensure you scramble and cook the egg before adding it. If not the egg will coat the rice and make everything into a paste.
