Family recipe for baked beans

Ingredients

  • 1 pound small white beans or navy beans

  • 1 brick salted fat back or 1 package bacon cut into 1” pieces

  • 1 lg. onion

  • ¼ cup molasses

  • 1 teaspoon baking soda

  • ½ teaspoon dry mustard

  • If using bacon about ½ teaspoon kosher salt

  • If using salt pork wait until cooked before adding salt.

  • Pepper to taste

  • 1 tablespoon maple syrup(optional)

Directions

  • Rinse beans and remove any dark beans.
  • Place beans in crock pot and cover with water, leaving the heat off cover and leave overnight to soak.
  • After an overnight soak, add remaining ingredients.
  • Set crock pot to high & allow to cook for at least 8 hours.
  • They’re cooked when beans are tender. Taste & add additional salt/pepper as needed.
  • Alternatively
  • Spread dry beans on a towel or baking sheet remove any dark beans.
  • Place beans in a 2 quart covered saucepan cover with water bring to a boil lower heat so it doesn’t spill over. Let them boil for 20-25 minutes.
  • Drain, place in crock pot add remaining ingredients cover with water.
  • Set crock pot to high & allow to cook for at least 8 hours.
  • They’re cooked when beans are tender. Taste & add additional salt/pepper as needed.

Notes

  • Soaking the beans over night will help reduce intestinal distress.
