Ingredients
1 pound small white beans or navy beans
1 brick salted fat back or 1 package bacon cut into 1” pieces
1 lg. onion
¼ cup molasses
1 teaspoon baking soda
½ teaspoon dry mustard
If using bacon about ½ teaspoon kosher salt
If using salt pork wait until cooked before adding salt.
Pepper to taste
1 tablespoon maple syrup(optional)
Directions
- Rinse beans and remove any dark beans.
- Place beans in crock pot and cover with water, leaving the heat off cover and leave overnight to soak.
- After an overnight soak, add remaining ingredients.
- Set crock pot to high & allow to cook for at least 8 hours.
- They’re cooked when beans are tender. Taste & add additional salt/pepper as needed.
- Alternatively
- Spread dry beans on a towel or baking sheet remove any dark beans.
- Place beans in a 2 quart covered saucepan cover with water bring to a boil lower heat so it doesn’t spill over. Let them boil for 20-25 minutes.
- Drain, place in crock pot add remaining ingredients cover with water.
- Set crock pot to high & allow to cook for at least 8 hours.
- They’re cooked when beans are tender. Taste & add additional salt/pepper as needed.
Notes
- Soaking the beans over night will help reduce intestinal distress.
