Creamy Sun Dried Tomato Pasta

Perfect dish when you are in a rush and need a boatload of pasta.

Ingredients

  • 1 pkg Turkey/Chicken sausage hot/mild

  • 1 chopped onion

  • 1 Tablespoon minced garlic more or less to taste

  • 1 jar Pastene Julienne sun dried tomatoes drained

  • 1 box Chicken Broth

  • 1 pint cream

  • 1 box Rigatoni pasta (Any tube pasta would work)

  • (Optional) 1 Bag spinach

Directions

  • Remove sausage for casings and brown in a large pan.
  • Add chopped onion and cook until translucent and fragrant.
  • Add sun dried tomatoes (Add small amount of oil from the jar) and garlic.
  • Add chicken broth, 1 pint cream and pasta stir well, keep uncovered.
  • Stir periodically until liquid is reduced and has thickened.
  • If you are going to add spinach add the bag of spinach in the last 10mins cover and wilt the spinach.
  • Once spinach has wilted finish combining into the dish and remove the lid once again.

Notes

  • If you want left overs this dish is great, in some cases it might be a better idea to make a half batch.
