Peanut Butter Cookies

minutesLove of peanut butter in a convenient easy to hold format.
Ingredients
1 cup unsalted butter – softened
1 cup smooth peanut butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
2 1/2 cups all purpose flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
Directions
- Preheat oven to 375F
- Combine flour, baking powder, baking soda and salt – set aside
- In large bowl cream butter with sugar and brown sugar until creamy and fluffy.
- Add one egg at a time until fully combined.
- Combine dry and wet ingredients until just combined.
- Using cookie scoop or spoon scoop dough onto parchment lined cookie sheet.
- Using fork make a crisscross pattern – this is optional, cookies will be fluffy if no crisscross pattern is made.
- Bake for 8-10 minutes – cookies should look underdone – they will set out of oven. Overcooking will lead to dry cookies.
